Food shall be protected from cross contamination by separating raw and ready to eat foods during food storage. Raw meats shall be stored below cooked and ready-to-eat foods and raw meats should be stored according to required final cook temperatures (see stacking reference sticker provided by EHS for an easy example of how to store foods).
