TCS* foods: Time-temperature control for safety foods...CFPM: Ahmed Aljoudi Alhassani, Exp. 2-2-2029...DISCUSSION: Hamilton Beach food processor is not approved (states "Household Use Only" on label). Remove from facility and replace with approved ANSI/NSF certified equipment...Maximum registering heat sensitive test strips used for hot water sanitizing dishwasher are for 180F maximum temperature. Hot water sanitizing rinse only has to reach 160F at the dish rack. When purchasing more test strips, obtain strips that are heat sensitive to 160F...Solid wood shelves installed on kitchen walls (for large boxes of single service items) must be sealed or painted (so it is non-absorbent). Any new shelving, equipment, etc. installed in kitchen must meet ANSI/NSF certification or equivalent. |
