Each handwashing sink shall be provided with individual disposable paper towels or other approved hand drying system. Roll of paper towels on counter near sink, moved closer to sink area. Please add paper towel dispenser to this handsink.
4-601.11(B) and (C); Core; Tracks of deli cooler have some food debris. Coil and top part of dish sprayer at three compartment sink has sticky residue. Nonfood-contact surfaces of equipment shall be kept free of a buildup of dust, dirt, food residue and other debris. Clean these areas more frequently.
3-501.16 (A)(2) and (B); Priority; Noted containers of chicken salad were temping between 44-45 F at the grab n go station. Observed condensation build up inside noted containers of chicken salad. Also noted one of the turkey hoagies, located closer to front of the grab n go station was temping at 43 F. Further investigation determined the ambient air for the Grab n Go station was approximately 41 F. Also noted a few packages of sliced turkey were reading between 42-43 F in the display cooler. Display cooler appears to be working well (ambient air 38 F ). Discussed only storing 2-3 layers of the packaged sliced turkey as oppose to 3-4 layers to allow for adequate air flow around noted product in the display cooler side. CDI- Noted TCS items in the grab in go station and display cooler were discarded. PIC has placed a work order for noted unit to have serviced. Instructed PIC to relocated TCS items to the coldest section of the grab in go cooler unit and adjust temp on unit until for assessment completed.

Avoid using hex head screws and bolts on exposed surfaces in the kitchen. Also do not use flat head countersunk screws unless there is a counter sunk hole or a proper washer for a counter sunk screw. Things need to be functional but also easily cleanable. Shelves, racks etc installed with hex that should be round head screws. The food prep sink is attached to the wall with flat head screws and should be round head screws. The wire baskets need to be installed so then can be removed for cleaning as they are intended to be installed.
