3-501.16 (A)(2) and (B); Priority; Raw chicken, lamb gyro meat, and potato salad were 42 to 44 degrees F. Cold food product must be held at a temperature at or below 41 degrees F. until service. The generator for the mobile food unit should be kept on during travel times in order to keep food product refrigerated and at proper cold storage temperatures until preparation and service.
