Use the prep sink for food prep (washing and cutting tomatoes and any other misc. food prep). Prep sink is currently being used as chemical storage and prewash. Tomatoes are being washed in a bucket at three compartment sink and cut on the canrack cutting board that is in poor repair. 1.5

Signs that had been hung inside the lids to the pizza prep oven have fallen off and fall into the food whenever the lids are closed, these signs are soiled. Pizza cutters must be washed, rinsed and sanitized at least every four hours. Recommend a system to ensure this is happening, and recommend every two hours as a safe guard. When asked, employee stated at 12, around 4 and around 8 or 9. 3.0
