NOTE: Had a lengthy discussion with store manager (Gary Stewart) and Thomas Jumalon (via phone) regarding Walmart's "time in lieu of temperature (TILT)" policy. This policy appears to be a quality control process - and not a time control policy. Remember that if a food is truly on time control, it can never be put back on temperature control (i.e., hot holding, cooling to cold hold). Foods on time hold must be discarded after end of the time hold period. Our department will give further guidance and feedback on this form after reviewing it further.
