saw food being prepared in the kitchen that is for immediate service. The temps in the kitchen were around 70 plus degrees and some of the foods being prepared were around this same temp. Suggested placing prepared foods immediately in the cooler to keep them cold enough until served. Also suggesting using cold water instead of hot when preparing noodles that will be mixed into a salad.
