Educational note in response to employee question: The Rules do not speak to a temperature requirement for rinsing utensils before the sanitizing step. Additionally, the Rules do not speak to whether rinsing is to be done under flowing water or in a vat of clean water. So long as rinsing is effective and rinse water is clean, potable water, the specifics of rinsing are left to the policies of the establishment.

Good hot holding temperatures on hot breakfast line. Thank you for your efforts in this area. ***The NC Rules Governing the Sanitation of Food Service Establishments 15A NCAC 18 A .2600 are changing and the changes will become effective on September 1, 2012. The new rules are based on the 2009 FDA Food Code and current food science and include changes that will affect nearly all food establishments. These rules include some concepts new to North Carolina, such as date labeling and employee health policies; and update important rules on handwashing, food handling, and consumer advisories. The new rules also include guidelines and procedures for establishments that serve food to highly susceptible populations, including preschool age children in a custodial setting. Some elementary schools will fall under these guidelines. Information is available on the Wake County Environmental Services website at www.wakegov.com/food . Feel free to contact your inspector with any questions.***

Sugar and cinnamon stored in food service style shakers labeled as sanitizer test containers. Discussion with person in charge about use and intended purpose of these containers indicate that it is unlikely that these containers ever contacted any chemicals more hazardous than than normal warewashing and sanitizing. Even though no immediate risk is present with these containers, strongly recommend that establishment put in place a policy that no containers labeled for any chemical use are ever to be used for food. Person in charge voluntarily discarded product as a precaution. Hot water at one handwash sink observed at 118 degrees F. Rules do not specify a maximum acceptable handwashing water temperature. However, most people will be uncomfortable at water temperatures over 110 degrees F. Recommend that water temperature at handwash sinks be set at 100-110 degrees F to encourage proper handwashing.

Broth made from room temperature ingredients observed cooling in reach in cooler, and likely to cool within approved timeframe. However, recommend that all cooling be done in ice bath or walk in cooler. Some floor panels in walk in freezer observed to be raised compared to adjacent panels. This could indicate ice formation under panels. Floors easily cleanable and appear to be otherwise in good repair. Monitor and have serviced if rubber seals between panels become damaged or if floors begin to pull apart significantly.
