Observation: Wrapped shred chicken sandwiches observed at 107F in hot holding cabinet. Food safety plan currently does not have a written time control policy for specific products. A combined temp/time check for products when removed from hot holding cabinet. Food items are not temperature checked prior to going into hh cabinet after processes occur causing temperature loss. Food items that may lose temperature through processes during production such as wrapping sandwiches or layered processes, (chicken, burgers, wraps, soft tacos) CDI: A time control was implemented for the chicken sandwiches that fell out of temperature as a corrective action.
