3-501.15; Priority Foundation; Containers of recently portioned corned beef and pork carnitas were found holding above 41F in the main service line cooler. Cooling shall be accomplished by placing food into shallow pans, separating into smaller or thinner portions, using rapid cooling equipment or other effective methods. CDI- food items were spread out along a sheet tray and rapidly cooled in the freezer.
