If you cook and cool your food and hold it refrigerated, there is no minimum reheat temperature if you are reheating for immediate customer service. So in other words if a customer orders chicken and you take pre-cooked chicken from the refrigerator you could serve it cold or you could warm it up to any temperature such as 110 degrees and send it out the window.
