3-501.16 (A)(2) and (B); Priority; Crab meat in the top bin of prep. cooler was 45-47 degrees F. Crab meat in bags in the reach in cooler was 46-48 degrees F. Cold foods must be kept at temps. at or below 41 degrees F. The ambient air temp. of the reach in cooler was 44 degrees F. Recommend keeping both the reach in cooler and the prep. cooler on colder temp. settings during periods of peak usage when these coolers are being opened and closed frequently. Manager iced the crab meat to drop temperatures. Product was not discarded since it had only been bagged prior to food truck leaving commissary for this day. Manager stated that he would adjust the thermometer settings in these coolers to colder temp. settings.

If product is being reheated for hot holding it is best to use a thermometer to make sure the product has reached an internal temperature of 135 degrees.
