(1)It is raining under the hood again today. I think the steamer vent pipe needs to be extended so condensation does not form on the cold surface of the hood and rain back down. The steamer vent needs to be extended up high enough so it goes into the vents and does not condensate on the bottom of the hood. (2)Remove the yellow colored metal channel that is attached to conduit if it does not serve a purpose. There are three conduits with these channel irons attached. Their purpose may have been to hold them in place when the concrete was being poured and they no longer serve a purpose other than to collect dirt and tater tots. (3)Also the condensers out back have been damaged from vandals bending the fins. (4)The exterior black finish on the proof cabinet corner at the base and the door is peeling off.

(1)The floor has settled in the boys and girls rest rooms. There is a gap at the floor and the base tiles. This gap needs to be filled with grout or caulk and should be smooth and easily cleanable, it should not look like globs of bubble gum stuck in a crack. Remove existing caulk and properly fill the gap. (2) There is a gap between the wall and the mop sink. Fill the gap with mortar or concrete grout. Trowel smooth with a slight slope toward the sink. The surface should be nearly slick when finished.

The breaded chicken patties in the salads are 54 degrees. The salads were setting on ice and the chicken is at the top of the salad with layers of lettuce under the chicken. This would be a good item to do time holding with, where you put a time and date on the product when it is put out and discard after 4 hours if it is not sold. (They were put back intro the refrigerator today.)

Screw on a "45" section of pipe and then screw on a 14 to 16 inch section of straight pipe. Add another "45" and straight section if needed. This should bring the steam up high enough so it goes into the vents and does not condensate on the bottom of the hood.
