It was determined that the speed rack was rolled out of the walk-in cooler and was left at room temperature for an unknown amount of time. 2) Deli slices in front grab and go case were holding between 44F-46F when temped. Ambient air readout on digital thermometer of this unit was showing 35F. TCS food shall be maintained at 41F or less for cold holding. CDI- Housemade chicken salad was voluntarily discarded and in the grab and go deli case, some packages were voluntarily discarded and the rest were returned to the walk-in cooler to rapidly cool.
