Burgers were spread out on plastic tray in unit, manager said that is how WCPSS receipe states to do. Recommend preparing less at a time when removing from oven and putting on bread, use different container that holds burgers closer together (laying them out on a tray is a great way to cool them down, but does not hold in heat). Cheeseburgers were reheated to 165F while onsite.
