Sanitizer in spray bottle over 400ppm, no sanitizer in buckets. Provide sanitizer at 200ppm in spray bucket or bottle, only those who know how to mix it should be aloud to mix it. Observed employee using all purpose cleaner to clean table during food surface. Use warm soap and water, rinse it off, then spray on sanitizer or use bucket sanitizer to wipe on sanitizer. (this has to be done even after an all purpose cleaner is used). Suggestions: have buckets/bottles out under prep tables so they are accessibles, move other chemicals to back mop room, leaving only sanitizer out so employees have to think about what/when they are going to use. Food chopper visibly soiled, clean and sanitize after each use. If not using still has to be clean if in facility.
