3-501.15; Priority Foundation; Gyro meat in the cooling process is stored next to the turner on which it cooks and hot meat is put on top of cooling meat - in addition, meat that temped at 113F had only cooled down to 110F in 20 minutes due to the heat from the turner. Chickpea salad was made and put in the top section of the prep cooler without cooling down to 41F. Cooling shall be accomplished using methods such as portioning food into smaller amounts, placing the food in shallow pans, using containers that facilitate heat transfer... CDI - Cooling gyro meat moved to another section of the kitchen and spread out to cool down before putting in walk in cooler. Container of chickpea salad moved to freezer and stirred every so often to rapidly cool down.
