This turkey is reheated from commercial processing in bags of gravy. The bags are checked with a metal stem thermometer pressed between 2 bags. This indicates the temperature of the gravy from the outside of the bags, not the temperature of the pieces of the turkey. A digital thermometer that reads off of the end of the probe inserted into a piece of the meat needs to be the method of verification. Employee says that the bags were heated in the steamer for 2 hours. Reheat time or temperature needs to be increased. Heat each piece of turkey to at least 135'F before holding above 135'F.
