One of the serving line milk coolers is not working, it is not in use, but it needs to be repaired or replaced; PIC said a work order had been put in but the box had not been repaired yet. During inspection, the water at the mop sink was found on while the sink was not in active use. Leaving the mop sink on with shut offs downstream from the vacuum breaker can cause leaks and/or malfunction of the vacuum breaker. To prevent damage and potential backflow, make sure to turn off the water and release the pressure from the faucet when it is not in use. NOTICE: Effective January 1, 2019, the NC Food Code 3-501.16 (A)(2)(b)(ii) requires equipment to be upgraded or replaced to maintain food at a temperature of 41 degrees F or less. Please plan accordingly. Failure to comply with temperature requirement after January 1, 2019 will result in violation and point deduction.

Near the serving line registered, commercially bottled Naked Juice smoothies were sitting in cold water but were 54F. They are marked with "Perishable" and "Keep Refrigerated". These markings could indicate that the juice is potentially hazardous and should be maintained at 41F or less. The juice had been on ice but the ice was melted. Recommend putting out fewer juices and packing them in ice instead of putting them into an ice water bath. The juices were iced down and quickly re-cooled during inspection.
