Egg on prep table at 95-100F cooling. Once a PHF reaches 135F active cooling is to begin. Once removed from hot holding cabinets place into refrigeration to cool rapidly.
PHFs (Potentially Hazardous Foods) must cool from 135F-70F within 2 hours and 70F-45F within 4 hours. Monitoring of the PHFs is crucial. If it is observed that the food will not reach 70F within the allotted 2 hours then more aggressive cooling methods may be utilized or the food may be reheated to 165F and cooling may begin again allowing for another 2 hours.
To facilitate cooling follow 1 or more of these guidelines: Place food in shallow pans, separate large portions into smaller or thinner portions, use rapid cooling equipment, use an ice water bath and stir frequently, use containers that facilitate heat transfer, and or add ice as an ingredient. Leave completely uncovered if on top shelving or in no danger of adulteration from above. Loosely cover cooling foods if below other food items or other possible sources of adulteration.

Toilet paper is very difficult to dispense. The tissue is so thin that it nearlt disintegrates in the hand while getting it. Large dispensers are located as close to the ground as possible, well below the level of the toilet. I cut my hand trying to get toilet paper due to the way one must reach their hand down, under, up and into the dispenser scraping across parts of the dispenser. I met with the assistant principle after my last inspection and we looked at the problem in the restroom together. It has not been corrected and continues to be a problem. Children will have a difficult time getting their own paper. Dispensers in stalls need to be relocated. A hands should not be cut while getting toilet tissue in an elementary school. Children should not have to get off of the toilet to get tissue. Consider providing tissue that can be pulled from the roll without tearing into confetti because it is so thin. I have looked for this problem at other schools and have not found it to be a problem anywhere else.

Cooked Breaded Chicken Breast Tenders received from USDA inspected plant in a sealed bag are being cooked, partially cooled, placed on salads and then refrigerated. These fully cooked chicken tenders are not required to be cooked. If they are, cook to at least 135F. Consider using them cold, fresh from the box, to minimize handling and time in the temperature danger zone. Recommend discussing at your next managers' meeting.

the following e-mail was sent to the assistant principal after meeting with him to discuss and demonstrate the unacceptable quality of the toilet paper provided to students: Hi Mr. Batten, We met this morning following your inspection. I am concerned with the toilet tissue that is provided for your students. It is extremely thin and cannot be obtained by children. The large rolls are heavy, and when the tissue is pulled, tears into tiny pieces, as opposed to unraveling. The tissue is not strong enough to support the force needed to turn the rolls (especially a new roll). The dispensers are also mounted as close the floor as possible, requiring a child to get off of the toilet and closer to the ground to reach into the dispenser. Toilet paper dispensers should be located higher on the stall walls so that children have access to the paper. Please consider the age of the children served by this school and provide a tissue and dispenser that is appropriate. I encourage you to have students test and provide feedback on this situation. It is my understanding that staff have smaller rolls. Thank you for your attention. Angela Myers Wake County Environmental Services
