A mobile food unit shall have a potable water system under pressure. The system shall furnish hot and cold water. I have issued an intent to suspend your permit. You have 30 days to get the water system repaired or your permit will be suspended and the mobile Food Unit must close. Until the water system is repaired you may only sell hotdogs. The hot water had a good flow. The improvements noted on David Adcock's inspection have been corrected and the mobile food unit is clean. There was lots of ice on the raw chicken. The operator had paper work from Chris Walker stated the permit was reinstated because they have a commissary. The paper work was dated 5/27/10. Called Ashely he stated it was ok to do the inspection The permit was posted. Will update Chris Walker and Jason Royal during business hours.

The raw chicken is stored in a container in the unit. There is no refrigeration and no ice. The raw chicken is 57 degrees and must be held cold at 45 degrees or colder....The cooked chicken kabobs are in a pan that does not have a heat sourse and the chicken is only 122 degrees. After cooking the chicken keep it hot at 135 degrees or hotter.

Your permit has been suspended. The unit must be repaired so that you can store the meat at 45 degrees or colder. After cooking the chicken you must be able to maintain it hot at 135 degrees or hotter. The unit needs to be modified. You need to add a new burner. All repairs must meet NSF standards.
