10. 5-205.11; Priority Foundation; Pan lids and utensils were stacked in the handwash sink. A prep cart was placed in front of the sink. The handwash sink must be kept clear and available for staff use at all times during hours of operation. Manager cleared utensils out of hand sink and moved cart during the time of inspection. 1.0
22. 3-501.16 (A)(2) and (B); Priority; Deli ham in prep. cooler was 54 degrees F. Cold food items must be held at temps. at or below 41 degrees F. Cooler was functioning properly with an interior ambient air temp. of 40 degrees F. The deli ham had been placed in the top serving section of the cooler. The lid on the top of the prep. cooler must be kept shut as much as possible to maintain proper cold holding temp. of food items. Items like deli ham in the prep. cooler may need to be kept on ice during periods of peak use when the cooler lid is opened for an extended period of time. Manager discarded the out of temp. deli ham prior to the end of inspection. 1.5
