In the small precook cooler, there were several items found to be held above 41F (see temperature chart). TCS food shall be maintained at 41F or below. CDI: PIC moved salsa and sour cream back to the walk in, as it had only been pulled two hours prior and the food in the precook cooler was moved to the walk in, as it had also been pulled from the walk in approximately 2 hours prior and the cooler was turned down.
