Effective October 1, 2021, the North Carolina Food Code Manual was updated based on adoption of the 2017 FDA Food Code, in accordance with the 15A NCAC 18A .2600 Rules. The food truck had been closed for over a month due to its vending site, the flea market at the NC State Fairgrounds, being closed during the set-up, operation, and clean up for the NC State Fair in October. The sour cream was 43 in the tall refrigerator. Sour Cream is not potentially hazardous so I did not take any points. Keep an eye on the refrigerator and make sure food is staying at 41 degrees or colder. If there is a refrigerator problem be sure to get it fixed so food stays 41 degrees or colder.

The fresh mangos in the refrigerator were 43 degrees. There was nothing in the refrigerator that required refrigeration but if there was it would need to be stored at 41 degrees or colder. (The fresh mangos were bought today the bananas were 39 degrees that it didn't check until after I went back.)
