Noted Walk-in freezer is entirely congested with cases of food to compensate for the loss of use of the walk-in cooler unit. Technicians assessed repairs and provided a new work order (27585363) for "installation of new equipment" and parts on 2/28/23. EHS contacted the M&O Customer Service line (919) 856-8120 and left a message for Sharon Robinson for a follow-up on the completion of repairs. 0.5

The existing ice machine is no longer operating and a new machine has been brought in but it has not been hooked up. The new machine is currently sitting next to the prep table. According to the manager, the machine has been sitting in the facility since February. Ice is used to hold cold foods on the serving line and for cooling hot foods, a functioning ice machine is needed to properly maintain foods at safe temperatures. The old machine needs to be removed so that the new machine can be installed.

In the storage area off the dining room where paper goods, trays, etc are stored, some items are stored on overturned milk crates. The height of the crates is acceptable to meet storage requirements but the crates cannot be easily cleaned under. The crates need to be moved frequently for cleaning in the area but it would be preferable to use a dunnage rack or shelving that is open at the bottom so that the floors are more easily accessible for cleaning.

Also if you had a time holding agreement for cut cantalope it could be held and served for up to four hours and then discarded. I don`t think it would be a hazard to serve it the way it was today since the lunch period ends around 1:30 and the mellons were cut at about 10:30.) 2.0
