The ice machine needed cleaning. (I took it apart and the manager and I cleaned it.)

Many of the hotdogs and the hamburgers in the buns were not hot enough. After cooking the hotdogs and hamburgers hold them hot at 135 degrees or hotter. If you put them in the bun they must also stay hot at 135 degrees or hotter. Be sure to work with the product quickly and get it back to the hot holding cabinet. Be sure that the hot holding cabinet is working correctly and the settings are correct. The hotdogs, hamburgers and the bbq pork were all cooked hot enough and will be a safe to eat for todays lunch. All hamburgers and hot dogs that are left over need to be discarded if they have been put in buns because these are not holding at the proper tempatures. (The manager on dudy is going to discard all hamburgers and hotdogs that have been put into buns today.)

Several of the thermometers were way off. The manager calibrated them and did a good job. The adjusting nuts may be loose and this will cause them to get off easily. Also after they have been calibrated do not leave the adjusting nut in the little wrench. Push the stem through the other side so it is not in the wrench. Replace cracked thermometers and thermometers with loose adjusting nuts.

The hotdogs are 120 and must be held hot at 135 or hotter. (The plastic film was removed and within a few min the hot dogs were hot enough. After cooking the hotdogs and putting them in the buns, they may cool down a little. Work quickly and it would be best if the buns were warm and try different things to maintain them hot in the hot holding cabinet.

The milk in the milk box is not cold enough. It is 48-58 degrees. Until the new milk box gets here use the coolers with ice. The milk must be maintained cold at 45 degrees or colder.

The can opener is installed up-side-down. One sink has had a garbage grinder removed and just left a hole in the sink basin. I think it would be best if the plumbing is hooked back up and the drain re-connected. The 2 compartment sink basin is rusty. It needs to be cleanen with the proper type scrubby and maintained.

The drain out by the milk box smells bad!!! Pour a large volume (5 gallons)of water down the drain and see if that helps. A little bleach might help or other approved sanitizer. It it still smells it may just need to be sealed up. Clean up the old dish room aqnd get rid of unused items. Seal up where equipment has been removed.

PAINT IS PEELING ON THE WALLS IN THE DRY STORAGE ROOM,IN THE CHEMICAL STORAGE ROOM AND IN THE MAIN KITCHEN. REPAIR. REPAIR CRACKED PAINT IN THE CHEMICAL STORAGE ROOM. CEILING IS DIRTY IN THE WALKIN COOLER BY THE CONDENSER.
