Dial top thermometers are not designed to accurately check temperatures of thin foods. A thin probe thermometer that can accurately take the temperature of thin foods must always be available.

CDI- PIC stated that the sneeze guards were removed to be cleaned and sanitized; however, they were not put back into place at the service line until prompted to do so. Facility is equipped with a 3-door tall reach-in freezer that is holding at -1F and is being used in lieu of the walk-in freezer until unit can be serviced and is holding proper temperature for frozen foods. 2) Tall reach-in cooler is not holding proper temperature for storage of TCS food (see temperature chart). Equipment shall be maintained in a state of good repair and condition. PIC showed EHS email correspondence with supervisor regarding walk-in freezer. Most recent correspondence was on (10/26) requesting a time frame on when the freezer will be repaired. Follow up with maintenance/supervisor and ensure walk-in freezer is repaired prior to next inspection to avoid full point deductions for repeat violation. PIC states that some frozen products for this school is being stored at a neighboring school (Millbrook Elem.) until walk-in freezer unit is repaired. Maintenance arrived during inspection to repair the 3-door reach-in freezer. Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide food temperatures as specified under Chapter 3. Observed turkey in the walk-in after thawing. The turkey was 64F. After speaking with manager, it was found that the turkey was thawed under running water, which at this time of year, is around 75F. Thawing under running water is allowed but the water should be at 70F or less. During summer months when temperatures are warming, thawing should be done under refrigeration.
In the dry storage room, 2 dunnage racks are turned so that the support bar is blocking the area under the rack. Turn the rack around so that the open side of exposed to make cleaning the floors under the racks easier.
