3-501.13 ; Priority Foundation; Observed raw lobster tails thawing in a prep sink under running water with a water temperature of 81F. TCS foods shall be thawed under refrigeration that maintains the food temperature at 5C (41F) or less OR completely submerged under running water at a water temperature of 21C (70F) or below. CDI- lobster tails removed from water and placed in the walk-in cooler to quickly cool down from being thawed. Ensure proper thawing methods are followed to avoid temperature abuse.
